- 40 g flour
- 4 tablespoons of cranberry compote
- 1 bright biscuit
- 1 tablespoon of pear brandy
- 250 g of pears
- 75 g of chocolate for cooking
- 100 g of sweet cream
At 180 degrees preheat the oven. Foam one egg and 40 g of sugar. Stir in the flour and cocoa. In a greased mold, bake a biscuit for about 10 minutes. Serve light biscuit in succession, 4 tablespoons berries, cooled dark biscuit, 4 tablespoons berries, then light biscuit. Stack on one another. Peel the pears, peel them and dice them.
Roast pears on brandy for about 3 minutes, then strain. Melt chocolate. Separate egg yolks from egg whites. In a pot immersed in warm water, mix 40 g of sugar and egg yolk. Then remove the pan from the water and stir for a while. Stir in the chocolate mixture. Beat the egg white to 20 g of sugar. Whisk the cream separately into the whipped cream and mix in the cream. Grease the cake with half of the cream, then place the pears and finally grease the rest of the cream.
